  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • 2 cloves garlic minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon chili flakes optional
  • 1 teaspoon toasted sesame seeds
  • 2 green onions thinly sliced

Method
 

  1. Wash and thinly slice the cucumbers.In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, and chili flakes.Add the cucumbers to a large bowl.Pour the dressing over the cucumbers and toss until evenly coated.Sprinkle with sesame seeds and sliced green onions.Refrigerate for 15 minutes before serving to allow the flavors to develop.Toss again and serve chilled.
