Coleslaw
  • 6 cups shredded green cabbage
  • 2 cups shredded purple cabbage
  • 1 cup shredded carrots
  • ¼ cup finely chopped red onion optional
Dressing
  • ¾ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon celery seed
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Wash and shred the cabbage and carrots if not using pre-shredded vegetables.Combine the green cabbage, purple cabbage, carrots, and red onion in a large bowl.In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, honey, celery seed, salt, and black pepper.Pour the dressing over the vegetables.Toss until everything is evenly coated.Refrigerate for at least 30 minutes before serving.Toss again before serving and enjoy chilled.
