Ingredients
  

  • 8 large eggs
  • cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 2 celery stalks finely diced
  • 2 tablespoons red onion finely diced
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon chopped fresh parsley
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika optional

Method
 

  1. Place the eggs in a saucepan and cover with cold water.Bring to a boil, then cover, remove from the heat, and let stand for 10–12 minutes.Transfer the eggs to an ice bath and cool completely.Peel and chop the eggs into bite-sized pieces.In a large bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, pepper, and paprika.Fold in the chopped eggs, celery, onion, chives, and parsley.Mix gently until everything is evenly coated.Refrigerate for 30 minutes before serving.Serve on toasted bread, croissants, crackers, or lettuce leaves.
