Ingredients
  

Salad
  • 1 15-ounce can black beans, drained and rinsed
  • 1 15-ounce can black-eyed peas, drained and rinsed
  • cups sweet corn fresh, frozen, or canned
  • 1 cup cherry tomatoes halved
  • 1 red bell pepper diced
  • 1 jalapeño finely diced (optional)
  • ½ red onion finely diced
  • 1 avocado diced
  • ¼ cup chopped fresh cilantro
Dressing
  • ¼ cup olive oil
  • 3 tablespoons fresh lime juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon honey
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste

Method
 

  1. Drain and rinse the black beans and black-eyed peas.In a large bowl, combine the beans, corn, tomatoes, bell pepper, jalapeño, onion, avocado, and cilantro.In a small bowl, whisk together the olive oil, lime juice, vinegar, honey, chili powder, cumin, garlic powder, salt, and pepper.Pour the dressing over the salad.Toss gently until evenly coated.Refrigerate for 30 minutes before serving.Serve with tortilla chips or enjoy as a salad or topping.
