Ingredients

  • 4 6-ounce tilapia fillets (fresh or completely thawed)
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika or smoked paprika for a smoky touch
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 fresh lemon cut into wedges (for serving)
  • Cooking spray Avocado or olive oil, for the air fryer basket

Equipment

  • Air Fryer
  • Small bowl (for mixing spices)
  • Paper Towels
  • Wide spatula
  • Instant-read meat thermometer

Method

  1. 1. Preheat the Air Fryer

Turn on your air fryer and set it to 400°F (200°C). Let it heat up for about 3 minutes. Preheating gives the fish a jump-start on cooking and helps form a better crust.

    2. Mix the Spice Rub

In a small bowl, whisk together the garlic powder, paprika, onion powder, kosher salt, and black pepper until well combined.

    3. Dry the Fish

Thoroughly pat the tilapia fillets dry on both sides with paper towels. Removing excess moisture is absolutely essential to help the fish crisp up instead of just steaming!

    4. Oil and Season

Lightly brush or rub both sides of the fillets with the 1 tablespoon of liquid olive oil. Sprinkle the spice mixture evenly over both sides of the fish, pressing gently with your fingers so the rub sticks to the oil.

    5. Arrange the Basket

Spray the preheated air fryer basket with cooking spray to prevent sticking. Lay the seasoned fillets in a single layer. Do not overlap them! (Cook in batches if your air fryer basket is too small to fit all four).

    6. Air Fry

Cook at 400°F (200°C) for 8 to 10 minutes. There is no strict need to flip thin fillets, but you can gently flip them halfway through with a wide spatula if you prefer highly even browning.

    7. Check Doneness

The fish is done when it turns completely opaque and flakes easily with a fork. To be safe, an instant-read meat thermometer inserted into the thickest part of the fish should read 145°F (63°C).

    8. Serve

Remove the fish carefully with a wide spatula so it doesn't break apart. Garnish with a squeeze of fresh lemon juice from the wedges, and serve immediately!

Notes

  • Thawing Frozen Fish: If using frozen tilapia, thaw it overnight in the fridge or in a sealed bag submerged in cold water for 20 minutes. Press gently with paper towels to squeeze out the extra water frozen fish retains.
  • Variations: For a decadent finish, melt 2 tablespoons of butter with a squeeze of lemon juice and drizzle it over the fillets right after they finish air frying!
  • Storage: Store leftovers in an airtight container in the fridge for up to 2-3 days. Reheat in the air fryer at 350°F for 2-3 minutes.
Always pat your fish completely dry with paper towels before applying the oil and spices—this is the secret to a perfectly roasted exterior instead of a soggy, steamed fillet!
