Ingredients
  

Shortbread Crust
  • 2 cups all-purpose flour
  • ½ cup powdered sugar
  • ¼ teaspoon salt
  • 1 cup unsalted butter cold and cubed
Lemon Filling
  • 2 cups granulated sugar
  • ¼ cup all-purpose flour
  • 6 large eggs
  • 1 cup freshly squeezed lemon juice
  • 2 tablespoons lemon zest
  • Powdered sugar for dusting

  • 1 9×13-inch Baking Pan Lined with parchment paper
  • 2 Mixing Bowls One for crust, one for filling
  • 1 Whisk Mix lemon filling
  • 1 Citrus Zester Fresh lemon zest
  • 1 Citrus Juicer Fresh lemon juice
  • 1 Fine Mesh Sieve Dust powdered sugar

Method
 

  1. Preheat the oven to 350°F (175°C).Line a 9×13-inch baking pan with parchment paper.Mix the flour, powdered sugar, and salt for the crust.Cut in the butter until the mixture resembles coarse crumbs.Press evenly into the prepared pan.Bake for 20 minutes, until lightly golden.Meanwhile, whisk together the sugar, flour, eggs, lemon juice, and zest.Pour the filling over the hot crust.Bake for another 22–25 minutes, until the center is just set.Cool completely, then refrigerate for 2 hours.Dust generously with powdered sugar before slicing.
