  • 2 15-ounce cans chickpeas, drained and rinsed
  • 1 English cucumber diced
  • cups cherry tomatoes halved
  • 1 green bell pepper diced
  • ¼ cup red onion thinly sliced
  • ½ cup Kalamata olives halved
  • ½ cup crumbled feta cheese
  • ¼ cup chopped fresh parsley
Greek Dressing
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 garlic clove minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Method
 

  1. Drain and rinse the chickpeas thoroughly, then pat them dry.Dice the cucumber and green bell pepper, halve the tomatoes, slice the onion, and chop the parsley.In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, Dijon mustard, oregano, salt, and pepper.Add the chickpeas, cucumber, tomatoes, bell pepper, onion, olives, feta cheese, and parsley to a large mixing bowl.Pour the dressing over the salad and gently toss until evenly coated.Refrigerate for 10 minutes to allow the flavors to blend.Garnish with extra feta, parsley, and a lemon wedge before serving.
