Salad
  • 2 15-ounce cans chickpeas, drained and rinsed
  • 1 English cucumber diced
  • cups cherry tomatoes halved
  • 1 red bell pepper diced
  • ¼ cup red onion finely diced
  • ½ cup Kalamata olives sliced
  • ½ cup crumbled feta cheese
  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped fresh mint optional
Lemon herb dressing
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 garlic clove minced
  • 1 teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Method
 

  1. Drain and rinse the chickpeas, then pat them dry with paper towels.Dice the cucumber, red bell pepper, and red onion. Halve the cherry tomatoes, slice the Kalamata olives, and chop the parsley and mint.In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, minced garlic, oregano, salt, and black pepper until well combined.Add the chickpeas, cucumber, tomatoes, bell pepper, red onion, olives, feta cheese, parsley, and mint to a large mixing bowl.Pour the dressing over the salad and gently toss until all the ingredients are evenly coated.Refrigerate for 10 minutes before serving to allow the flavors to meld.Garnish with extra feta, parsley, and lemon wedges, then serve chilled.
