Ingredients
  

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the peanut butter, butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  6. Scoop tablespoon-sized portions of dough and roll into balls.
  7. Place on the prepared baking sheet about 2 inches apart.
  8. Use a fork to gently press a crisscross pattern on each cookie.
  9. Bake for 10–12 minutes, or until the edges are lightly golden.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use creamy or crunchy peanut butter depending on your preference.
  • Chill the dough for 20 minutes if it's too soft.
  • Sprinkle flaky sea salt on top before baking for extra flavor.
