Ingredients
  

For the Dough
  • 1 cup warm whole milk 110°F/43°C
  • teaspoons active dry yeast 1 packet
  • ¼ cup granulated sugar
  • 2 large eggs room temperature
  • ¼ cup unsalted butter melted
  • 1 teaspoon salt
  • 4 to 4½ cups all-purpose flour
For the Filling
  • ½ cup unsalted butter softened
  • 1 cup packed brown sugar
  • 2 tablespoons ground cinnamon
  • ½ teaspoon ground nutmeg optional

For the Cream Cheese Frosting

  • 4 ounces cream cheese softened
  • ¼ cup unsalted butter softened
  • cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 –2 tablespoons milk if needed

Equipment

Method
 

  1. Combine warm milk, yeast, and sugar. Let sit for 5–10 minutes until foamy.Add eggs, melted butter, salt, and most of the flour. Mix until a soft dough forms.Knead for 8–10 minutes until smooth and elastic.Place the dough in a greased bowl, cover, and let rise for about 1½ hours or until doubled.Roll the dough into a 16×12-inch rectangle.Spread softened butter evenly over the dough.Mix brown sugar, cinnamon, and nutmeg, then sprinkle evenly over the butter.Roll the dough tightly into a log and cut into 12 equal rolls.Arrange the rolls in a greased 9×13-inch baking dish, cover, and let rise for 30–45 minutes.Bake at 350°F (175°C) for 22–25 minutes, or until lightly golden.Beat together the cream cheese, butter, powdered sugar, vanilla, and milk until smooth.Spread the frosting over the warm cinnamon rolls and serve.

Notes

  • Use room-temperature ingredients for the best dough.
  • Don't overheat the milk or it may kill the yeast.
  • Dental floss creates cleaner slices than a knife.
  • Cover loosely with foil if the tops brown too quickly.
  • Store leftovers in an airtight container for up to 3 days.
